Chicken tinga tacos are a tasty and filling meal for two. Chicken tinga is an authentic Mexican dish from Puebla, Mexico made from shredded chicken marinated in red wine, tomato, and spices, then cooked in a smoldering and slightly hot tomato-based sauce called torts. It can be either served raw in corn tortillas, with refried beans, in a flour tortilla, or as tacos, except that it can also be used in many other ways, such as in quesads, tostadas, or burritos. The chicken is shredded tender and very flavorful.
Chicken tinga tacos are usually served with a sauce of red or green torts along with shredded vegetables and some chopped tomatoes. The traditional red-brined chicken is made by soaking the chicken overnight in water and then allowing it to be marinated in red wine for several hours. Once prepared, it is cooked in a pan over medium heat until the juices of the wine run clear.
